We love burgers , hot dogs and BBQ chicken as much as anyone else; but sometimes you need a change from the typical "cookout experience". If your family loves seafood then you will definitely want to try this recipe for a copycat of Tony Roma's Carolina Honey BBQ Salmon.
Everyone who knows me well knows that I LOVE to cook & bake. A few years ago my grandparents got me the "Top Secret Recipes: Restaurant Collection" cookbook for Christmas & it has become one of my favorites! This salmon recipe was one of the first Hubs & I tried out, I was pregnant with our firstborn & it quickly became a go to. This is a recipe that keeps us grilling year round, yes even in the snow; it really is that good!
First, every great meat starts with an awesome rub or sauce...well this salmon has both, but the rub is where it all begins. We've found that we love creating the rub the night before and letting it sit overnight.
1 tsp salt
1/2 tsp black pepper
1/4 tsp paprika
1/4 tsp garlic powder
1/4 tsp cayenne pepper
4 6-ounce salmon fillets
Combine all of the spices & sprinkle them over both sides of the salmon. This can be done right before you grill, or overnight its all up to you! When your ready to grill, spray each fillet lightly with olive oil. Grill the salmon for about 3 minutes then rotate it 90 degrees to make some nice grill marks. Grill for another 3 minutes and then turn the same over and repeat.
This recipe is great with some teamwork, usually while Hubs is out manning the grill I stay in to make the sauce. what do you think of our "grill"? We have a nice gas grill, but Hubs is from Maine and apparently grilling over an open fire is the "cool thing" to do do...it does make everything taste yummy!
1 cup ketchup
1 cup white vinegar
1/2 cup molasses
1/2 cup honey
1 tsp liquid hickory smoke
1/2 tsp salt
1/4 tsp garlic powder
1/4 tsp onion powder
1/4 tsp Tabasco pepper sauce
Combine all the ingredients for the sauce in a saucepan over medium/high heat. Blend the ingredients with a whisk until smooth. When the mixture comes to a boil, reduce heat and simmer uncovered for 3 minutes or until mixture thickens. Remove from heat. When the salmon is cooked you can brush it with the sauce & it's ready to serve!
The sauce recipe makes WAY more than you need for just the salmon, so we usually serve this dish up with some rice to cover with the sauce as well. AH-mazing! Add a baked sweet potato on the side and you have the perfect meal , no matter the time of year.
