Going Green Event - Green Noodles

If you've been following us for long, you know that almost 2 years ago our lives drastically changed when our Buddy was diagnosed with epilepsy. We had already been on a road where we were trying to eat "well" and limit the medicines we put into our bodies; but this was a wakeup call. We surely didn't want to put Buddy on meds on a daily basis that could harm his kidneys. The solution for us was eliminating processed foods from our diet. We have found a lot of recipes that we love, but just a few weeks ago I found a new dinner plan that blew me away!!

  The first thing that was eliminated from our diet was artificial dyes. On occasion we will find natural ways to "color" our foods, because our kids love it! In honor of Earth Day, I'm sharing with you a great recipe for Green Noodles, that I found over at Chocolate Covered Katie.

Green Noodles

- 1/4 cup minced garlic
- 1 1/2 Tbsp fresh ginger, grated
- 1 cup fresh cilantro, loosely packed
- 1 tsp tumeric
- 1/2 tsp salt
- 1 tsp coconut oil
- 15 oz canned coconut milk
- 1/4 cup water
- 2 tbsp sweetener of choice (I used raw local honey)
- 2 tbsp lime juice
- 5 oz raw kale
- 2 Tbsp minced garlic
- 3 Tbsp soy sauce
- 2 Tbsp water
- 6 cups broccoli, cut small
- 2 servings soba noodles (80g uncooked)

In a blender, puree the first 10 ingredients until completely smooth, then transfer to a small saucepan and bring to a boil. Lower and simmer for 15 minutes. In a saute pan, saute the kale and 2 Tbsp garlic in a little oil until the kale begins to melt. Add the soy sauce, 2 Tbsp water, and the broccoli.
Cover and cook on medium for about 3 minutes. Meanwhile, put a pot of salted water on to boil for the noodles. When the three minutes are up turn off the heat on the kale & broccoli, but keep covered until the noodles are done. Cook noodles according to the package directions, drain fully & pat dry. Combine everything together , stir well and serve!





 While I was cooking this meal , I honestly thought to myself "no one is going to eat this, Hubs and I probably won't even like it".  I thought this for a few reasons :
   1- my kids despise cilantro
2- I had never cooked with coconut milk
3- I had never cooked with Soba noodles
4- 2 out of 3 kids don't like broccoli
5- Hubs doesn't like ginger
  So here I was prepping a meal that I really thought would get wasted, but I firmly believe in experiencing new tastes. 

   I couldn't of been more wrong about how this meal would go! My whole family loved it...let me tell you how dinner went:

   I placed the bowls in front of my kids, Buddy says "ugh, I don't like broccoli". I look at Hubs with the "I told you so" face, then look at Buddy and said "Please, just try it".  Lil Stinker takes a bite and says "mmm... this is so delicious!" , Buddy took a bite and said "mom, I actually like this!" and Sweet Pea started gobbling away! Buddy had 2 bowls, Lil Stinker had 3 1/2 and Sweet Pea had 1 1/2! WOW, I was blown away.... as for Hubs & I , we couldn't get enough!

   So, this Earth Day make things a little bit greener by eating these "Green Noodles" , your family will thank you.
