"Super food" dinner

So once again, my love of pinterest gave us a great new recipe to try! This time it was for a healthy side dish to go along with dinner. The main ingredient, I had heard of from watching all my cooking shows, but I had no idea what it was! Supposedly it is a super food though! Supposedly one of the best grains out there for you! It is called Quinoa (Keen-wa). So I saw this recipe...read it and honestly it kind of scared me, I just didn't know how it would all come together, especially since I didn't even have an idea of what the main ingredient was going to taste like. However, I decided to try it... my main two reasons for finally giving it a go : 1) its HEALTHY and I love making healthy meals for my family 2)I was talking half of our dinner to my parents since mom is still recovering from surgery and they love all of this healthy different food!
So here is the recipe!
Black Bean and Mango Quinoa Salad

1 cup quinoa
1 can black beans (rinsed and drained)
1 mango diced
1 tomato seeded and diced
1 cup of cilantro finely chopped
1/2 red onion finely chopped
1/2 cucumber chopped
1 red pepper diced
1 lime
2 Tbsp olive oil
1 tsp garlic salt
dash red pepper flakes
salt and pepper to taste

Combine quiona and 2 cups of water in a saucepan, boil for 15 minutes, or until all the water is absorbed. Let cool. Drain and rinse your beans. Chop all your fruit and vegetables and place in a large bowl. Add the beans and cooled quinoa. Squeeze the juice of the lime, olive oil, garlic salt, red pepper flakes, and salt and pepper to taste. Stir to combine. Chill in the fridge before serving.

The only thing I did different was leave out the red pepper flakes! The only reason being Aaron and myself aren't crazy about spicy food. As I was mixing it all together, I was still so nervous! My nerves were for nothing though, it was delicious!!! I served it with salmon , but honestly it would even be great with burgers and dogs at a cookout! Isaac and I loved it, even Aaron asked for seconds. My parents really enjoyed it as well! I highly recommend it!

Celebrating 7 years!

7 years ago, I was 22. I was just beginning to figure out who I was as a person. I was crazy about this guy! I knew I wanted to spend the rest of my life with him. I was getting ready to say I DO, not only to becoming a wife....but to becoming an adult! I was saying yes to a whole new chapter in life! A chapter that I was very eager to begin, but one that I couldn't have wrote out at that time. I knew marriage would be "hard", but this man that was standing at the other end of the aisle.... he was PERFECT! As I was walking towards him I wasn't thinking of the hard times, I was thinking of how PERFECT our lives would be together! We had NEVER had an argument and we NEVER would! We would spend our first year of marriage getting to know each other, learning to live together and loving EVERY single moment of it! After a year we would have our first child! We would be done having kids by the time I was 30, and we would have 4! After 4 years of marriage we would move out of our "starter home" and buy some land and build a home that we would LOVE! Isaac would have the PERFECT 9-5 job, I would have dinner on the table every night when he got home and our kids would do EVERYTHING we expected of them.
Ok so I know by now you are laughing.... because I am! My expectations, while they sound AMAZING! Were totally UNREALISTIC!
Today, I am 29. I am still trying to figure out who I am. Luckily, I am still crazy about this guy! I most definitely want to spend the rest of my life with him! I would totally say I DO again to him. Now, lets be honest.... there have been days that were NOT PERFECT! Days where I didn't feel so "in love" or loved. I found out that my husband, while he is rather wonderful, he is NOT PERFECT! We have definitely had our share of arguments! I have loved the sum of our 7 yrs together, but I have NOT loved every single moment. That might sound horrible, but its honest! And we have had other struggles, our first child didn't come after one year of marriage but shortly before celebrating our 4th year...I am almost 30 and I pray we are not done having kids, as we still do want 4! ;-) 7 years later we are still in our starter home....while there are days I wish it were bigger, I love it! I love it , because I love those who I share it with. Isaac has an amazing job, he's home by 6, but he is also in bed by 6:30 because of the long drive he makes. It's only because of this short amount of time we have in the evenings that I have dinner on the table when he gets home. Our kids.... while I consider them to be WONDERFUL , they (well I can't say they yet, because Micah is too young) do not do EVERYTHING I expect! Marriage and Parenting its hard work, its all harder than I could have prepared myself for, but I honestly wouldn't trade it for the world! I love my life and ADORE my family! God is so good and I am glad that His plans are better than my own.

Work with what ya got!

So I am obsessed with cooking shows (as I write this I am also watching Rocco's dinner party). One of my favorite shows is Chopped. Isaac and I have talked about having a "Chopped dinner night" where we each go to the grocery store and pick out 4 random items and make dinner around that. I think it would be pretty fun! :)
Today was supposed to be my grocery shopping day...but I got lazy , well not really lazy, I did housework instead. I figured tomorrow is Isaac's day off and I can do it then. :) So when it came time for dinner tonight I was worried about what I would make. I had porkchops and that was it! I am out of rice, I am out of potatoes... so I went digging around the fridge to see what I could come up with. I have always wanted to be one of those people that can cook FAB meals without a recipe... thats just never been me, I always have a cookbook infront of me. Tonight however, I had no choice! Luckily I did have sweet potatoe fries in the freezer... but I didn't know what to do with the pork chops. Here is what I came up with. While I will not claim this to be extravagant , we LOVED it!

I had apples and peaches, so I peeled them and diced them. I put the apple in a saute pan with a tad of water and seasoned them with some nutmeg and cinnamon, after about 8 minutes or so (on low) I threw the peaches in and sauted it all on low for about 5 more minutes. While this was going on in another pan I had my porkchops and I lightly coated them with bbq sauce. The chops with the fruit paired together was wonderful!!! Simple, easy and yummy!!! I have to say I am pretty proud of myself for working with what I had and it turning into a new family favorite meal!

Bubble fun

It's been one of those weeks, its 100 degrees outside by 10:00 it seems. Aaron loves to be outside, but I feel like if we don't get out first thing in the morning its not going to happen because of the heat. So I have been thinking we need something fun, but that doesn't require a lot of running around to get him entertained. Because lets face it, I am not a morning person so its rare for us to get outside by 9:00. SO i needed something for outside, but not too strenous so Aaron wouldn't get over heated. SO where did I turn?!? You guessed it, Pinterest!! Have I got you hooked yet?
Here's what I found!!!

1) Gather a plastic bottle (we used an old water bottle) , a terry washcloth, and a rubber band (we used a hair tie).

2) Cut the bottom off of the water bottle, then cut your wash rag into a circle big enough to cover the water bottle hole , secure it with your rubber band.






3) Dip the washcloth end of the bottle into a bowl of dish soap and a little of water. And then blow on the opposite end of the bottle for lots of bubble fun!!



We had a lot of fun with this until, despite all my warnings... Aaron breathed in and got a mouth full of soap! He spit and spit, and drank water... and was done for the day! ha ha! He said it was fun, but wanted to take a break! :)
